Lemon Myrtle roasted macadamia nuts

Who doesn't love a little healthy snack with a little bush superfood twist. Roasted macadamias with a native Australian bush superfood twist.

 

Makes: 1 cup

Prep: 5 mins

Cook: 10 mins 

Ingredients:

1 cup raw macadamia nuts

1 tsp olive oil (or coconut oil)

2 tsp fresh lemon juice

3 tsp Kakadu Plum Co. lemon myrtle with kakadu plum

Zest of 1 lemon

Pinch cayenne pepper or ground chilli

Pinch good quality salt

 

Method:

1.    Pre-heat oven to 160’C.

2.    In a mixing bowl toss macadamia nuts with olive oil and lemon juice to coat evenly.

3.    Add lemon myrtle, lemon zest, cayenne pepper and salt. Toss to evenly coat.

4.    Spread onto a lined baking tray and roast in oven for 10 minutes (checking and agitating after 5 minutes) or until lightly golden. Allow to cool. Store in an air-tight container.

 

Recipe Tips:

Enjoy as a healthy snack, add to salads or chop and sprinkle over savoury dishes.
