Quinoa Coconut Porridge

I don't know about you, but sometimes finding a simple yet different and tasty breakfast is often something of a treat. Breakfast in the Kakadu Plum Co. headquarters is most often than not rushed - rushing for the day, rushing to get dressed for school and just generally rushing. However, it is so comforting to know that sometimes that extra five minutes can make all the difference for the day, because starting the day right with a healthy breakfast is the way to go. 

We absolutely love this recipe that was created by Zoe from Wild Blend Co. She makes such incredible dishes that incorporate her healthy and nutritious philosophy. 

So, when you are needing an extra little breakfast treat that is quick and easy, try this fabulous Quinoa Coconut Porridge with Kakadu Plum Powder. 

1 cup boiled quinoa
1 cup coconut milk
1 tsp Kakadu Plum Powder
1/4 tsp cinnamon
1/4 tsp vanilla bean powder
1/2 tsp honey 

Place coconut milk in a small sauce pan and bring to the boil. Stir in the honey, vanilla & cinnamon & simmer for 5 minutes. 

Pour the hot coconut milk over your (already cooked) quinoa. 

Mix through the Kakadu Plum Powder or sprinkle on top
Serve with your favourite fruit
