Vegan Twix Bars by @the_veggie_stalker
Thinking chocolate, dessert and Kakadu Plum Powder? Think about these amazing Vegan Twix Bars created by The Veggie Stalker. These have our mouth salivating! And warning...!! These are addictive! And moreish!
1/2 cup coconut flour
1/2 cup psyllium husk
2 tbsp coconut sugar
1/3 cup coconut oil
2 tbsp maple syrup
The caramel layer:
2 cups pitted dates (soaked in warm water for 1 hour and drain)
2 tbsp ground vanilla bean
1 tbsp Kakadu Plum Powder
The chocolate layer:
400grams dark chocolate (70-80% cocoa)
Preheat oven to 180 degrees Celsius
Mix all the ingredients for the base in a bowl. Make sure that the dough is sticky enough by pressing it together with your fingers. If it is too dry and crumbly, add some more maple syrup and coconut oil until sticky.
Line a medium to large sized baking tin with parchment paper and press the base dough inside until it is evenly spread. Bake at 180 degrees Celsius for 10-15 minutes or until golden brown.
Place all ingredients for the caramel layer into a blender or food processor and mix for 3-5 minutes until combined. Spread the caramel layer over the base and freeze for 30 minutes.
Cut into small bars. Coat with melted chocolate and put on a cooling rack so excess chocolate can drop off. Put in the freezer to set.
